The Perfect Summer Supper.
This was our dinner the other night:
We grilled skewers of chicken chunks with marinaded mushrooms and zucchini; we used shallots from our backyard in the marinade, and we’d grown the zukes too. Seven measly snap peas; we never get much, because whenever we fnd a few, we pick and eat them. And fresh cucumber spears. (And yes, it was organic free range chicken.) Totally simple. Fast. Yummy.
The only thing that might have made it better would be if the tomatoes had ripened a little more and we could have sliced up one of those too.
I love summer.
