Crispy Cinnamon Garbanzo Beans

I found this recipe at, a really fun blog a friend just introduced me to–these crunchy little numbers kick butt as a healthy non-allergenic snack food, and even my picky son loves them.

You can find the recipe here–I of course tweaked it a little bit. I added a bit more sugar at the end of the process, because I have a big sweet tooth, and a bit less salt than the recipe called for.

Long story short, you buy dry garbanzo beans, soak them overnight but don’t cook them, and then toss them in a little oil and seasonings before roasting them on a cookie sheet for 45 minutes at 350 degrees. Then once out of the oven you immediately toss them in a little more seasoning, in this case sugar and cinnamon.

I would never in a thousand years have thought to try something like this, but these are fabulous.
