I rarely eat mayonnaise. For one thing, my husband doesn’t like it. (He’s never tried this, though!) For another, it’s one of those things where the calorie intake just doesn’t seem worth the enjoyment I get out of eating it. (Unlike, say, chocolate, or using half-and-half in my coffee instead of skim.)
But this recipe makes me want to give it a shot:

I haven’t tried it yet, and I probably should, before actually posting a woo-woo blog post about it, but I don’t want to lose track of it, and I really really do want to try it…(I guess I could pin it, right? Oh well…)
Mayo is one of those things, like instant pudding and sweetened condensed milk, that seem sort of like a Mystery Substance, something you buy in a jar or box or whatever that someone else makes. But this…to make mayo so easily, out of such simple ingredients…I gotta try this.
